A Rather Satisfying Sunday



Despite waking up at 3a.m. with an odd and horrifying dream (James Fenimore Cooper was force-feeding me poisoned berries)*and having a devil of a time going back to sleep, I woke up relatively bright and early this morning.

I need to remember that I have a far better day-off when I wake up early and then take a brief nap in the afternoon. When I sleep late, I find I'm grumpy and upset that the morning is nearly gone. Today was productive and restful; I stayed home excepting a quick trip to Publix for the week's groceries. Sam and I had time together. Hope curled up next to me on the couch to watch Inkheart. And Beauregard, the dandiest cat around, curled up on my pillow next to me for an afternoon nap.

In addition to spending time with the man/child/cat I love the most I actually accomplished quite a bit today. Grocery shopping, organizing cupboards, cleaning the litter box, vacuuming and dusting were all ticked off the to-do list. There was also time for fun.

I baked blueberry muffins for National Blueberry Muffin Day (albeit a day late).**

Vanishing Blueberry Muffins (vanishing thanks to Hope and Sam)

Combine 1 1/4 cups of oats, 1 cup of all-purpose flour, 1/3 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. In another bowl combine 1 cup of milk, 1 egg, 1/2 of applesauce. Add the wet ingredients to the dry ingredients and mix until lumpy; fold in 1 cup of fresh blueberries. Fill greased muffin tin (only about 2/3 of the way) and back at 425 for 20 -25 minutes.

I finished and framed Pregnant Friend #1's gift and worked diligently on pregnant friend #2's gift.




Right now Applesauce Oatmeal Cookies are baking and I'm about to make some tea.
