Vanilla Chai Cupcakes with Ginger Cream Cheese Frosting


As promised, here is the recipe. In the next month or so, I plan on having a decent camera to take pictures of all my creations (thread, food, and the kid).

Vanilla Chai Cupcake:

2/3 cup softened butter
¾ cup sugar
1 ½ cups all purpose flour
1 ½ teaspoons baking powder
¾ teaspoon salt
3 eggs
1 teaspoon of vanilla extract
8 bags of India Spice Chai Tea (I used Celestial Seasonings brand because it is what I had on hand)

Preheat oven to 350. Line a cupcake pan
In large bowl mix the butter and sugar until they are fluffy (about 5 minutes or so)
Stir the eggs in one at a time
Add the vanilla and tea (I cut open the teabags and dumped in the dried tea), stir until mixed well
Add the flour, baking powder, and salt and stir until just mixed (it should be a bit lumpy)
Spoon into the cups / bake for 18 to 20 minutes

Ginger Cream Cheese Frosting:

½ cup softened butter
8 ounces of cream cheese
4 cups of confectioners’ sugar
2 teaspoons of vanilla extract
2 teaspoons of ginger
a sprinkling of nutmeg

Blend together the butter and cream cheese (don’t do like I did and burn out the motor of the hand mixer!)
And the rest of the ingredients and then beat until creamy
Sprinkle the nutmeg on top of the freshly frosted cupcakes
