Oatmeal Applesauce Cookies


I made these cookies late last night. I was out of raisins and substituted almonds. The almonds added a nice crunch. I have the word of two giggly little girls that these cookies are "super awesome!" Next time, I might add in a bit of brown sugar for a little more sweetness.

I'm off to the kitchen to finish up dinner. I'm roasting potatoes in the oven and simmering a pot of green beans (all produce thanks to the Farmer's Market). Now to throw some chicken in a pan (FYI Publix's Zesty Italian Salad Dressing is the BEST chicken marinade).

Yum! I've had something like this before and they were delicious. I like the almond idea a LOT!
