Orange-Cranberry Clove Bread


This morning I was curled up on the couch, under a quilt, reading a creepy book (The Seance).  I got to thinking that my cup of coffee was lonely and I needed something warm to eat.  I tore myself away from reading and wandered in the kitchen.  What to make.  I'm sick of heavy, sweet foods and I wanted something quick unlike a traditional yeast bread.  Oh, and I do like a good holiday smell wafting through the house.  hmmmmmm.... I thumbed through some cookbooks and didn't find anything right away and Hope was quietly playing on the computer so all-recipes was out.  What to do?

In a fit of daring I made up a recipe.  Honestly, this is the first time a recipe has come out of my brain.  Usually, I at least start with a base recipe and then add and subtract ingredients.  This time -- it was all me.

Behold, Orange-Cranberry Clove Bread:

It was super-easy to whip up as it only uses one bowl and one pan.  The bread is tart from the cranberries, with just enough sweetness from the marmalade, and a warmth from the cloves.  DELICIOUS!



Orange-Cranberry Clove Bread

Ingredients:

1 3/4 C all purpose flour
1t. baking soda
3/4 t. salt
1/2 t. nutmeg
1/2 t. cinnamon
1 t. cloves (cut to 1/2 t. if you prefer less spice)
3/4 cup sugar
1/2 C orange marmalade
splash of lemon juice
splash of vanilla
1/3 C of water
2 eggs


Grease and flour a loaf pan; preheat oven to 350.  Combine dry ingredients in bowl and mix well.  Dump in wet ingredients and mix well.  Pour into pan and bake 1 hour.

i needed something to bake tonight, it's been kinda stressful around here... i'm thinking i'll tweak the liquid measurements a little, maybe add orange juice since i don't have fresh cranberries, only dried. but dang woman, this sounded amazing.
